Garlic Aioli

12 cloves garlic
3 egg yolks
1 1/2 cups olive oil
1 teaspoon lemon juice
salt to taste

Peel and mash the garlic cloves with a little salt; put in a bowl and stir in the egg yolks one by one; when blended, beat in the oil slowly, starting in drops. Finally, add the lemon juice.
