Bouquets Garnis are blends of herbs and spices, and are
a wonderful way to add flavour and body to your cooking. Here, a simple
recipe you can follow:
3 stalks parsley
1 sprig thyme and
1 bay leaf
Tie the herbs together in a little bundle with a piece of sting.
Add to any stew, sauce or casserole you're preparing and remove the
bouquet garni before serving. You can use either fresh or dried herbs.
12 cloves garlic
3 egg yolks
1 1/2 cups olive oil
1 teaspoon lemon juice
salt to taste
Peel and mash the garlic cloves with a little salt; put in a bowl
and stir in the egg yolks one by one; when blended, beat in the
oil slowly, starting in drops. Finally, add the lemon juice.
