Basic Fish Fillets
Fresh fish fillets (will work for almost all fish fillets!)
Salt, pepper, and olive oil
Preheat the oven to 425 degrees. Season fish to taste. Thin fillets
of fish, such as sole, can be rolled up to make them thicker and
moister.
Bake fish for about 10 minutes. Turn your oven to broil. Cook
the fish under the broiler for another 2 to 4 minutes, depending
on thickness.
If you would like it to cook a little more just leave the fish
on the hot pan for 2 or 3 more minutes.
Keep in mind that fish overcooks very easily, so less is better
than more.
